Cochon's Abita Beer Whole-Grain Mustard
by Lauren Salkeld
I am filled with regret over all the years I wasn't eating mustard. And now that I've discovered just how much I actually love mustard, I can't get enough. That's not entirely true. I can definitely get enough yellow, deli-style mustard, and I can only eat so much Dijon. But, my affection for whole-grain mustard is just about limitless.
When Cochon's new Abita Beer Whole-Grain Mustard ($4.99 for a 6-ounce jar) showed up on my desk I was pretty sure I was going to love it.
Besides the obvious—it's whole-grain mustard—I was really excited
because this new condiment comes from New Orleans, which is my college
hometown and one of my favorite places on earth. Plus, it's made with
Abita beer (yum) and was created by the chefs at one of my favorite Big
Easy restaurants, Cochon's Donald Link and Stephen Stryjewski.
Just to be sure, I picked up some andouille for an informal taste
test. The robust mustard was perfect with the sausage, but I have to
admit eating it by the spoonful as well. While I loved the flavor—a
lovely balance of sharp and sweet—I was really won over by the
texture—a confetti-like mix of yellow and brown mustard seeds makes for
a pleasant chewiness I found rather addictive. For more on Cochon's
