Abita Brew Pub Pecan Crusted Catfish
2 cups of honey
2 1/2 cups pecans
I cup heavy whipping cream
2 cups of milk
1 cup of flour
4 catfish filets
To prepare the Honey Pecan Sauce:
Heat honey over medium heat until it is thinned out.
Add heavy whipping cream.
Add 1/2 cup pecans.
Reduce until thick.
To Prepare the Catfish:
In a large bowl, pour milk and add eggs.
Put flour on a plate to dredge catfish in.
Put Pecans on a separate plate to dredge catfish in.
Lightly dip the catfish in milk/egg wash and then LIGHTLY coat in flour.
Dip in milk/egg wash again.
Dip in pecans making sure whole filet is coated well in pecans.
Fry Catfish at 350 degrees for 7-8 minutes.
Pour as much or as little sauce over catfish.
Serve with favorite potato and vegetable.
